I don't care how hot it is out, I'm a soup and stew girl through and through. Today, I improvised a stew out of whatever I had around and it was really really good its like kinda carribean and kinda asian and kinda like a gumbo??, so here's a rough recipe:

good stew for cool people

- 2 lbs chicken thighs

- 2 carrots, chopped normally

- 1 onion, chopped haphazardly

- bell pepper (i did not have but bell pepper and celery would be really good to add)

- as much garlic as your heart desires, chopped

- 1 can fire-roasted tomatoes

- Thai chilies (like 5 idk)

- not quite enough brown sugar

- however many frozen peas looks cool

- some flour

- slightly more oil than you think

- like 3 spoons chicken bouillon powder

- Italian seasoning mix (or any similar green flakes in your pantry. herbs de provance? sure)

- smoked paprika

- A GlugTM of soy sauce

- 2.13tbsp shaoxing rice wine

- a drizzle Worchestershire sauce

- slightly too much liquid smoke

- two "spoons" of jerk seasoning

instructions

roast half-thawed chicken thighs (i should have taken them out of the freezer earlier but i forgot) under broiler. combine oil and enough flour to form a loose paste and cook over low heat, stirring frequently until chocolate colored, then add in chopped vegetables. Stir fry until onion is translucent or you get bored. then add the chicken and all of the other ingredients except peas, plus 2 canfuls of water. simmer 5 hours, stirring occasionally and adding more water and adjusting seasonings as needed. add frozen peas 5 minutes or so before serving. serve over rice. or not im not ur mom
